Smoked Bologna
Take your granny's bologna sandwich to the next level

Method
Charcoal grill
Ingredients
One bologna chub, mustard, Big Cove BBQ Seasoning or your favorite BBQ seasoning
Steps
Prepare smoker at 250 degrees F
Score the bologna lengthwise in 0.5 inch increments
Then, repeat the scoring process crosswise
Apply a light layer of mustard to act as a binder, then season generously
Smoke until bologna reaches desired doneness (we like a minimum of 3 to 4 hours)
Remove and let rest, then slice and enjoy
Optionally, fry up slices in a pan and serve on Hawaiian roll with light mayo and a pickle slice
